Hobo Casserole with Ground Beef & Potatoes

This hearty Hobo Casserole combines layers of thinly sliced potatoes with savory ground beef, topped with a blend of cheddar and Parmesan cheese. A comforting and satisfying meal for the whole family.

For the Casserole:

  • 1 lb ground beef
  • 45 medium potatoes, thinly sliced
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • ½ cup beef broth
  • ¼ cup milk (optional)

For the Seasoning & Cheese:

  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt & pepper, to taste
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Brown the beef: In a skillet, cook the ground beef until browned. Drain excess fat.
  3. Saute onions and garlic: Add olive oil, onions, and garlic to the skillet. Cook until softened.
  4. Layer the casserole: In a baking dish, layer half of the potatoes, beef mixture, and cheeses. Repeat with the remaining ingredients.
  5. Bake: Pour beef broth and milk over the casserole. Cover with foil and bake for about 45 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden.
  6. Serve: Garnish with fresh parsley before serving.

Notes

  • You can customize this casserole by adding other veggies like bell peppers or carrots.
  • If you prefer a creamier texture, increase the amount of milk used.
