  • 100 g (3/4 cup) almond meal (ground almonds)
  • 1/2 teaspoon fine salt

  • Raspberry jam, apricot jam, or any jam of your choice
  • Icing sugar (powdered sugar), for dusting

Instructions

  1. Prepare the dough: In a large mixing bowl, cream the softened unsalted butter with the icing sugar until light and fluffy. Beat in the egg yolks and vanilla extract until fully combined. Gradually add the plain flour, almond meal, and fine salt, mixing until a smooth dough forms. Wrap the dough in cling film and refrigerate for at least 1 hour to firm up.
  2. Roll and cut the cookies: On a lightly floured surface, roll out the chilled dough to about 1/4 inch (6 mm) thickness. Using ghost-shaped cookie cutters, cut out an equal number of whole ghosts and ghost shapes with a small cut-out in the center (for the jam window). Place the cookies on baking trays lined with parchment paper.
  3. Bake the cookies: Preheat the oven to 180°C (350°F). Bake the cookies for 10-12 minutes or until the edges just start to turn golden. Remove from the oven and allow to cool completely on a wire rack.
  4. Assemble the Linzer cookies: Spread a small amount of your chosen jam evenly on each whole ghost cookie. Carefully place the matching ghost cookie with the cut-out window on top, pressing gently so the jam peeks through the window.
