For the Chicken:

  • 1 pound boneless skinless chicken thighs (or breasts)
  • Garnish (optional): 2-3 green onions

For the Vietnamese Chicken Marinade:

  • 1 1/2 tablespoons lime juice (about 1 small lime)
  • 1 1/2 tablespoons neutral or vegetable oil
  • 2 tablespoons soy sauce (low sodium is fine)
  • 1/2 tablespoon fish sauce
  • 2 tablespoons brown sugar
  • 2 teaspoons minced garlic (about 2 garlic cloves)
  • 1 teaspoon fresh grated ginger (or more if desired)
  • 1/4 teaspoon red chili flakes
  • 1 tablespoon cilantro (and more for garnish if desired)

Instructions

  1. Prepare the Marinade: In a bowl, mix together lime juice, oil, soy sauce, fish sauce, brown sugar, garlic, ginger, red chili flakes, and cilantro.
  2. Marinate the Chicken: Place chicken in a resealable bag or container, pour the marinade over it, seal, and refrigerate for at least 2 hours or overnight.
  3. Grill the Chicken: Preheat grill to medium-high heat, remove chicken from marinade, and grill for 6-7 minutes per side or until cooked through.
  4. Serve: Garnish with green onions and additional cilantro if desired, then enjoy!

Notes

  • You can adjust the level of spiciness by adding more or less red chili flakes.
  • For extra flavor, you can marinate the chicken for a longer period.
