Instructions

  3. Knead the dough: Transfer the dough onto a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. If using a stand mixer, knead with the dough hook on medium speed for 6-7 minutes.
  4. First rise: Lightly grease a large bowl with olive oil and place the dough inside, turning once to coat with oil. Cover the bowl with a clean kitchen towel or plastic wrap and let it rise in a warm, draft-free place for about 1 to 1½ hours, or until doubled in size.
  5. Prepare the pan: Generously oil a large baking sheet or rectangular pan with olive oil to prevent sticking and to help create a crisp crust.
  6. Shape the focaccia: Gently punch down the risen dough and transfer it to the prepared pan. Stretch and press the dough out evenly to fill the pan, creating dimples all over the surface with your fingertips.
