Instructions

  2. Beat Whites: Using a large, clean bowl, beat the egg whites with a mixer or whisk until stiff peaks form. This will give the omelette its fluffy texture.
  3. Beat Yolks: In a small bowl, whisk the egg yolks together with the salt until the mixture becomes pale and creamy, which should take about 30 seconds.
  4. Fold: Gently fold the beaten yolks into the stiff egg whites using a rubber spatula to retain as much air as possible. Then add half of the shredded cheddar cheese and fold again until evenly combined.
  5. Cook: Melt the butter in a large sauté pan over medium-low heat. Pour in the egg mixture and spread it evenly into a circle.
