Cookie Dough
- 1 cup butter, softened to room temperature (2 sticks)
- 1 1/4 cups sugar
- 2 oz cream cheese, softened
- 2 tsp vanilla extract
- 1/4 tsp almond extract (optional)
- 2 tbsp whole milk
- 2 3/4 cups all-purpose flour (343 grams)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
For Rolling
- Prepare the Dough: In a large mixing bowl, beat the softened butter, cream cheese, and sugar together until the mixture is light and fluffy. Add the vanilla extract, almond extract if using, and milk and mix well to combine.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt until evenly distributed.
- Mix Dry into Wet: Gradually add the dry ingredients to the wet ingredients, mixing at low speed until a smooth dough forms. Avoid overmixing to keep the cookies tender.
- Chill the Dough: Cover the dough with plastic wrap and refrigerate for at least 1 hour to firm it up, which helps in rolling and cutting.
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
- Shape the Cookies: Scoop out small portions of dough, roll them into balls, and then gently roll each ball in the 1/4 cup sugar to coat the outside.
- Flatten the Cookies: Place the sugar-coated dough balls on prepared baking sheets, spacing them about 2 inches apart. Gently flatten each ball slightly with the palm of your hand or the bottom of a glass to create discs.
- Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are just beginning to turn golden but the centers remain soft.
- Cool: Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a subtle almond flavor, the almond extract is optional and can be omitted or replaced with another flavor extract like lemon or orange.
- Ensure the butter and cream cheese are softened to room temperature for smooth mixing and better texture.
- Do not overbake the cookies as they will continue to firm up while cooling and you want them soft and tender.
- The chilling step is important to prevent spreading and helps in easy handling of the dough.
