This Easy One Pot Creamy Tomato Pasta is a quick and delicious meal that combines the richness of creamy sauce with the freshness of tomatoes and basil.

Main Ingredients:

  • 250 g (½ lb) uncooked spaghetti
  • 500 g (1 lb) fresh tomatoes, chopped (or use 1 x 400 g tin of chopped tomatoes)
  • 2 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 500 ml (2 cups) chicken or vegetable stock, use stock cube for convenience
  • 150 ml (¾ cups) double cream
  • ½ bunch fresh basil

Instructions

  1. Cook Spaghetti: Boil spaghetti according to package instructions. Drain and set aside.
  2. Sauté Ingredients: In a large pot, heat olive oil and sauté garlic and onion until softened. Add chopped tomatoes and cook for a few minutes.
  3. Add Stock and Cream: Pour in stock and double cream. Bring to a simmer.
  4. Combine with Spaghetti: Add cooked spaghetti to the pot and toss to combine. Cook for a few more minutes.
  5. Serve: Garnish with fresh basil leaves and serve hot.

Notes

  • You can add cooked chicken or shrimp for extra protein.
  • Feel free to sprinkle grated parmesan on top before serving.
