Instructions

  1. Prepare Dark Chocolate Layer: In a microwave-safe bowl, combine the 6 ounces of coarsely chopped semi-sweet chocolate with 3/4 teaspoon of vegetable or coconut oil. Microwave in 20-second intervals, stirring between each, until fully melted and smooth. Stir in 1/4 teaspoon of peppermint extract.
  2. Spread Dark Chocolate: Pour the melted dark chocolate onto a parchment-lined baking sheet or tray and spread evenly into a thin layer. Place in the refrigerator to set for about 10-15 minutes.
  3. Prepare White Chocolate Layer: In another microwave-safe bowl, combine 12 ounces of white chocolate (not all of it, reserve some for topping), with 3/4 teaspoon vegetable or coconut oil. Microwave similarly in 20-second intervals, stirring in between until melted and smooth. Stir in 1/4 teaspoon peppermint extract.
  4. Pour White Chocolate Over Dark Layer: Remove the dark chocolate layer from the fridge and gently spread the melted white chocolate over it, creating an even layer.
  5. Add Crushed Candy Canes: Immediately sprinkle the crushed candy canes evenly over the white chocolate layer, pressing down slightly to help them adhere.
  6. Chill to Set: Refrigerate the peppermint bark for at least 1 hour or until fully set and hardened.
  7. Break Into Pieces and Serve: Once firm, break the peppermint bark into irregular pieces and serve or package for gifting.
