Ingredients

Scale

Pie Crust

  • 2 (9″) pie crusts

Filling

  • 7 large Granny Smith apples, peeled, cored, and sliced into ½ inch slices
  • ½ cup granulated sugar
  • ½ cup light brown sugar (loosely packed)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • Zest of half a lemon

Finishing

  • 1 large egg, lightly beaten (for egg wash)
  • 2 tablespoons sanding sugar (optional)

Instructions

  1. Prepare the filling: In a large mixing bowl, combine the sliced Granny Smith apples, granulated sugar, light brown sugar, all-purpose flour, ground cinnamon, ground nutmeg, lemon juice, and lemon zest. Toss everything together gently until the apples are evenly coated with the sugar and spices.
  2. Preheat the oven: Set your oven to 425°F (220°C) to ensure it’s hot and ready for baking the pie.
  3. Assemble the pie: Roll out one pie crust and fit it into a 9-inch pie plate. Pour the apple filling into the crust, spreading it out evenly. Next, cover the filling with the second pie crust. Trim any excess dough from the edges, then crimp the edges together to seal the pie. Cut a few small slits into the top crust to allow steam to escape during baking.
  4. Apply the egg wash: Brush the top crust gently with the beaten egg to give it a beautiful golden shine. If desired, sprinkle the sanding sugar evenly over the egg wash to add a subtle sparkle and a bit of extra sweetness.
  5. Bake the pie: Place the pie on the middle rack of the preheated oven. Bake for 15 minutes at 425°F (220°C) to develop a golden crust. Then reduce the oven temperature to 350°F (175°C) and continue to bake for an additional 40-45 minutes, or until the crust is golden brown and the filling is bubbling.
  6. Cool before serving: Remove the pie from the oven and let it cool on a wire rack for at least 2 hours. This resting time helps the filling to set, making it easier to slice and enjoy.

Notes

  • You can substitute Granny Smith apples with other tart apple varieties such as Honeycrisp, Braeburn, or Fuji if preferred.
  • To prevent the bottom crust from getting soggy, you can brush it with a thin layer of melted butter before adding the filling.
  • If the edges brown too quickly, cover them loosely with foil partway through baking.
  • Serve your apple pie warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra special treat.
