Ingredients

Scale

Protein

  • 6 (4 to 6 ounces each) boneless skinless chicken thighs or breasts, cut into bite-sized pieces

Vegetables

  • 4 bell peppers, sliced (use mixed colors for a vibrant dish)
  • 1 small onion, sliced

Seasoning & Dairy

  • 1 tablespoon olive oil
  • 1 recipe or package fajita seasoning mix (taco seasoning can be used)
  • 1 cup sour cream
  • 4 ounces cream cheese, softened
  • 2 cups cheddar cheese, grated

Optional for Serving

  • Avocado
  • Guacamole
  • Sour cream
  • Salsa

Instructions

  1. Preheat and sauté chicken: Preheat your oven to 350°F (175°C). Heat olive oil in a skillet over medium heat and sauté the bite-sized chicken pieces until fully cooked through. Once done, remove the chicken from the skillet and set aside.
  2. Sauté vegetables: In the same skillet, add the sliced onions and bell peppers. Cook them until they reach your desired tenderness, stirring occasionally to ensure even cooking.
  3. Combine ingredients: Return the cooked chicken to the skillet with the vegetables. Stir in the fajita seasoning, sour cream, and softened cream cheese until everything is thoroughly combined and creamy.
  4. Add cheese and bake: Sprinkle the grated cheddar cheese evenly over the mixture. Transfer the skillet (if ovenproof) or the mixture into a greased casserole dish. Bake in the preheated oven for 10 to 15 minutes, or until the cheese is melted and bubbly.

Notes

  • Use pre-cooked chicken to shorten cooking time; about 5 to 6 cups of cooked chicken are needed.
  • If you don’t have an ovenproof skillet, transfer the mixture to a greased casserole dish before baking.
  • Serve topped with avocado, guacamole, sour cream, or salsa for added flavor.
  • This casserole pairs well with rice, cauliflower rice, or wrapped in flour tortillas for fajita-style meals.
