This easy 15-minute Lo Mein recipe is a quick and flavorful stir-fried noodle dish packed with crunchy vegetables and a savory homemade sauce. Perfect for a fast weeknight dinner, it uses simple ingredients like egg noodles, fresh carrots, cabbage, onions, and a balanced soy-based sauce that’s slightly sweet and umami-rich.

Ingredients

Scale

Main Ingredients

  • 8 oz Dry Egg Noodles (or fresh lo mein noodles)
  • 2 Carrots, sliced
  • 1/4 Yellow Onion, sliced
  • 3 cups Cabbage, thinly sliced (about 1/4 of a large cabbage)
  • 3 Garlic Cloves, diced
  • 1 bunch Green Onion (green parts only)

Lo Mein Sauce

  • 2 tbsp Dark Soy Sauce
  • 2 tbsp Soy Sauce
  • 2 tbsp Brown Sugar (or regular sugar)
  • 1 tbsp Water
  • 1 tsp Sesame Oil
  • 1 tbsp Corn Starch
  • 1/4 tsp White Pepper
  • 1 tbsp Oyster Sauce

Instructions

  1. Prepare the noodles: Cook the egg noodles according to package instructions until al dente, drain, and set aside.
  2. Make the sauce: In a small bowl, whisk together dark soy sauce, soy sauce, brown sugar, water, sesame oil, cornstarch, white pepper, and oyster sauce until smooth. This sauce will give the dish its signature savory and slightly sweet flavor.
  3. Cook the vegetables: Heat a large skillet or wok over medium-high heat. Add a small amount of oil, then sauté diced garlic until fragrant, about 30 seconds. Add sliced carrots, yellow onions, and cabbage, stirring frequently for 3-4 minutes until the vegetables are tender-crisp.
  4. Combine noodles and sauce: Add the cooked noodles to the skillet with the vegetables. Pour the prepared sauce over the noodles and vegetables, tossing well to coat evenly. Cook for an additional 2-3 minutes, allowing the sauce to thicken and adhere to everything.
  5. Add green onions and serve: Stir in the green onion greens and cook for another 30 seconds. Remove from heat and serve immediately for best texture and flavor.

Notes

  • For vegetarian option, omit oyster sauce and replace with mushroom sauce or additional soy sauce.
  • You can add protein such as chicken, shrimp, or tofu, cooking it separately before adding vegetables.
  • Use fresh lo mein noodles if available for best texture.
  • Adjust the brown sugar amount based on your preferred sweetness level.
  • Feel free to add other vegetables like bell peppers or snap peas for variety.
