Instructions

  1. Prepare the Mint Simple Syrup: In a small saucepan, combine 1/3 cup sugar and 1/3 cup water. Heat gently over medium heat, stirring frequently until the sugar dissolves completely. Remove from heat, add the bunch of fresh mint leaves, and allow the mixture to steep as it cools for about 15-20 minutes. Strain out the mint leaves and refrigerate the syrup until chilled.
  2. Prepare the Glass: Rub a lime wedge around the rim of your margarita glass, then dip the rim into margarita salt, coating it evenly. Set aside.
  3. Muddle Cucumber Slices: In a cocktail shaker or mixing glass, lightly muddle a handful of cucumber slices to release their juice and aroma without pulverizing them.
  4. Mix the Margarita: Add the tequila, fresh lime juice, and 1 ounce of mint simple syrup to the muddled cucumber in the shaker. Fill the shaker with ice and shake vigorously for about 15 seconds to chill and combine the ingredients.
