Ingredients

Scale

Meat

  • 1 lb ground beef

Vegetables

  • 4 medium potatoes, diced
  • 3 large carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can green beans (14.5 oz)

Liquids

  • 4 cups beef broth
  • 1 can diced tomatoes (14.5 oz)

Spices & Seasonings

  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Instructions

  1. Brown the ground beef: In a skillet over medium heat, cook the ground beef until fully browned, breaking it apart as it cooks. Drain any excess fat before transferring to the crock pot.
  2. Add vegetables: Place the diced potatoes, sliced carrots, chopped onion, minced garlic, and drained green beans into the crock pot with the browned beef.
  3. Pour in liquids and season: Add the beef broth and canned diced tomatoes into the crock pot. Stir in dried thyme, paprika, salt, and pepper evenly throughout the mixture.
  4. Cook the stew: Cover and cook the stew on low for 6 to 8 hours or on high for 3 to 4 hours until the vegetables are tender and flavors have melded.
  5. Final seasoning and serve: Taste and adjust seasonings with salt and pepper if needed before serving hot.

Notes

  • For a thicker stew, mash some of the potatoes after cooking or add a slurry of cornstarch and water towards the end and cook on high for 15 minutes.
  • You can substitute ground turkey or chicken for a leaner option.
  • Add other vegetables like celery or peas for extra nutrition and flavor.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
