Doughnuts:

  • 250g strong white bread flour, plus extra for dusting
  • 50g butter, diced
  • 1 x 7g sachet dried fast-action yeast
  • 3 tbsp caster sugar
  • 100ml milk
  • 1 egg
  • sunflower oil for deep-frying, plus extra for greasing

Filling:

  • 150g custard (from a 500g carton)

Instructions

  1. Prepare the dough: Mix flour, butter, yeast, sugar, milk, and egg to form a dough. Let it rise until doubled.
  2. Shape and fry: Roll out dough, cut into rounds, and deep-fry until golden. Allow to cool.
  3. Fill the doughnuts: Fill a piping bag with custard, pipe into doughnuts.
  4. Caramelize the sugar: Sprinkle sugar on top of filled doughnuts and caramelize with a blowtorch.
