Salad Ingredients
- 6 medium carrots, peeled and shredded
- 1 large apple, grated or julienned
- ½ cup diced celery (optional)
Dressing
- ¾ cup plain yogurt (or Greek yogurt)
- 1 tsp honey or maple syrup
- 2 tbsp lemon juice
- 1 tbsp chopped parsley
- Salt and pepper to taste
- Prepare the vegetables: Peel and shred the carrots, grate or julienne the apple, and dice the celery if using. Combine these in a large mixing bowl.
- Make the dressing: In a separate bowl, whisk together the plain yogurt, honey or maple syrup, lemon juice, chopped parsley, salt, and pepper until smooth and well combined.
- Combine salad and dressing: Pour the dressing over the carrot and apple mixture, then toss gently to coat all ingredients evenly.
- Chill and serve: Refrigerate the salad for at least 20 minutes to allow flavors to meld before serving. Adjust seasoning if necessary and serve cold.
Notes
- Using Greek yogurt will make the salad creamier and higher in protein.
- For a vegan version, substitute yogurt with a plant-based alternative and use maple syrup instead of honey.
- Add chopped nuts like walnuts or pecans for extra crunch.
- The celery is optional but adds a nice crisp texture.
