Base
- 80g sweetened condensed milk
- 80g butter
- 1 packet Girl Guide biscuits, finely crushed (230g/8oz)
- ½ cup dried cranberries / craisins (60g/2oz)
- ½ cup pistachios (60g/2oz)
Topping
- 190g white chocolate
- 1 Tbsp vegetable oil
- 2 Tbsp freeze dried raspberries, crushed (optional)
- Prepare the Base: In a large mixing bowl, combine the sweetened condensed milk and softened butter until well blended. Stir in the finely crushed Girl Guide biscuits, dried cranberries, and pistachios ensuring an even distribution of ingredients to form the base mixture.
- Press into a Pan: Line a square or rectangular slice pan with baking paper. Transfer the biscuit mixture into the pan and press firmly and evenly to create a compact base layer. Place the pan in the refrigerator to set for at least 30 minutes.
- Melt the Topping: Gently melt the white chocolate and vegetable oil together in a heatproof bowl over a saucepan of simmering water (double boiler) or in short bursts in the microwave, stirring frequently until smooth and glossy.
- Spread the Topping: Remove the base from the refrigerator and pour the melted white chocolate mixture over the top, spreading it evenly with a spatula. Sprinkle the crushed freeze-dried raspberries over the white chocolate topping if using.
