Instructions

  1. Prepare the onions: Peel and thinly slice the red onions. Heat the extra virgin olive oil in a large skillet over medium-low heat. Add the sliced onions, a pinch of kosher salt, and cook slowly, stirring occasionally, until onions are deeply golden and caramelized, about 30 to 40 minutes. Towards the end, stir in the balsamic vinegar and cook for an additional 2 minutes. Remove from heat and let cool slightly.
  2. Prepare the pie crust: Roll out the pâte brisée dough on a lightly floured surface to fit a 9-inch tart or quiche pan. Press the dough into the pan, trim the edges, and prick the bottom with a fork to prevent bubbling.
