  • Optional: 1 tsp chocolate chips for lava center

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) and lightly grease two ramekins to prevent sticking and ensure easy cake removal.
  2. Prepare Batter: In a blender, combine full-fat cottage cheese, egg, cocoa powder or melted dark chocolate, your choice of sweetener, vanilla extract, and a pinch of salt if using. Blend until the mixture is silky smooth and well incorporated.
  3. Fill Ramekins: Pour the batter into the ramekins, filling them about three-quarters full to leave room for the lava center and expansion during baking.
  4. Add Lava Center: Place 1 teaspoon of chocolate chips in the center of each ramekin and cover with a little more batter to seal them inside.
