Yeast Dough
- 2 1/4 teaspoons active dry yeast
- 1 cup warm water
- 1 tablespoon granulated sugar
- 3 1/2 cups all-purpose flour
- 1 teaspoon salt
- 2 tablespoons unsalted butter, melted
Baking Soda Bath
Topping
- 1 large egg, beaten
- 1/2 cup granulated sugar
- 2 teaspoons ground cinnamon
- Activate the Yeast: In a small bowl, dissolve the active dry yeast and 1 tablespoon of sugar in 1 cup of warm water. Let it sit for about 5 minutes until the mixture becomes foamy, indicating that the yeast is active.
- Prepare Dough: In a large mixing bowl, combine the flour and salt. Add the melted butter and the yeast mixture. Stir until the dough begins to come together, then knead on a floured surface for about 7-10 minutes until you have a smooth and elastic dough.
- Let Dough Rise: Place the dough in a lightly oiled bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1 hour or until it doubles in size.
- Preheat Oven and Prepare Baking Soda Bath: Preheat your oven to 425°F (220°C). In a large pot, bring about 10 cups of water to a boil and carefully add the 1/4 cup of baking soda. This will create an alkaline bath that gives the pretzels their distinctive crust.
- Shape Pretzels: Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope about 20-22 inches long, then twist into a traditional pretzel shape.
- Bake the Pretzels: Using a slotted spoon, dip each pretzel into the boiling baking soda bath for about 30 seconds, then place them on a baking sheet lined with parchment paper. Brush each pretzel with the beaten egg to give a shiny golden finish.
- Add Cinnamon Sugar Topping: Mix the 1/2 cup granulated sugar with 2 teaspoons of ground cinnamon in a shallow dish. Sprinkle or gently press this cinnamon sugar mixture onto the wet surface of the pretzels before baking.
- Bake and Cool: Bake the pretzels in your preheated oven for 12-15 minutes until golden brown. Remove from the oven and let them cool slightly on a wire rack before serving.
Notes
- For softer pretzels, brush with melted butter immediately after baking and toss in cinnamon sugar again.
- Ensure the water for yeast activation is warm but not hot to avoid killing the yeast.
- You can make mini pretzels by dividing dough into smaller portions and shortening baking time to 8-10 minutes.
- Use a slotted spoon to dunk pretzels in baking soda bath to avoid excess water in the dough.
