These Cinnamon Sugar Soft Pretzels are a delightful twist on the classic soft pretzel, coated in a sweet cinnamon sugar mixture. Perfectly soft on the inside and golden on the outside, these pretzels make a delicious snack or dessert that everybody loves.

Yeast Dough

  • 2 1/4 teaspoons active dry yeast

Baking Soda Bath

  • 1/4 cup baking soda

  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Activate the Yeast: In a small bowl, dissolve the active dry yeast and 1 tablespoon of sugar in 1 cup of warm water. Let it sit for about 5 minutes until the mixture becomes foamy, indicating that the yeast is active.
  2. Prepare Dough: In a large mixing bowl, combine the flour and salt. Add the melted butter and the yeast mixture. Stir until the dough begins to come together, then knead on a floured surface for about 7-10 minutes until you have a smooth and elastic dough.
  3. Let Dough Rise: Place the dough in a lightly oiled bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1 hour or until it doubles in size.
  4. Preheat Oven and Prepare Baking Soda Bath: Preheat your oven to 425°F (220°C). In a large pot, bring about 10 cups of water to a boil and carefully add the 1/4 cup of baking soda. This will create an alkaline bath that gives the pretzels their distinctive crust.
  5. Shape Pretzels: Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope about 20-22 inches long, then twist into a traditional pretzel shape.
  6. Bake the Pretzels: Using a slotted spoon, dip each pretzel into the boiling baking soda bath for about 30 seconds, then place them on a baking sheet lined with parchment paper. Brush each pretzel with the beaten egg to give a shiny golden finish.
  7. Add Cinnamon Sugar Topping: Mix the 1/2 cup granulated sugar with 2 teaspoons of ground cinnamon in a shallow dish. Sprinkle or gently press this cinnamon sugar mixture onto the wet surface of the pretzels before baking.
