Cookie Base
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 2 tbsp brown sugar
- 1 large egg
- 1/4 tsp almond extract
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- 1 1/4 cup all-purpose flour
- 1 tbsp cornstarch
- 1/4 tsp salt
Frosting
- 4 tbsp butter, salted or unsalted, softened
- 1 tsp vanilla extract
- 3 tbsp heavy cream
- 1 cup powdered sugar
- Christmas sprinkles, for decorating
- Prepare the Cookie Base: Preheat your oven to 350°F (175°C). In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg, almond extract, and vanilla extract, then mix well to combine all ingredients thoroughly.
- Mix Dry Ingredients: In a separate bowl, whisk together the baking powder, all-purpose flour, cornstarch, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
- Bake the Cookie Bars: Line a baking pan (approximately 8×8 inches) with parchment paper or grease it lightly. Spread the cookie dough evenly in the pan. Bake in the preheated oven for 18-22 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean. Remove from oven and allow to cool completely before frosting.
- Make the Frosting: In a bowl, beat the softened butter until creamy. Add vanilla extract and heavy cream and continue to beat until well combined and fluffy. Gradually add powdered sugar and beat until smooth and spreadable. Adjust heavy cream as necessary to reach your desired consistency.
- Frost and Decorate: Once the cookie bars are fully cooled, spread the frosting evenly over the top. Immediately sprinkle Christmas sprinkles over the frosting before it sets to create a festive appearance. Slice into bars and serve.
Notes
- Ensure the cookie bars are completely cooled before frosting to prevent melting the frosting.
- You can substitute almond extract for more vanilla extract if desired, but almond adds a nice holiday flavor.
- For easier cutting, chill the frosted bars in the fridge for 15 minutes before slicing.
- Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- Feel free to customize the sprinkles to match different holiday themes or occasions.
