Base
- 250g butter
- ¼ cup cocoa powder
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- ½ cup milk
- 2 packets (250g each) Marie or wine biscuits, crushed (not too finely)
Topping
- 190g white chocolate
- 1 tablespoon vegetable oil
- 1 teaspoon peppermint essence
- 100g Christmas M&Ms
- 4 candy canes, crushed
- Prepare the Base: In a saucepan over medium heat, melt the butter, then stir in the cocoa powder and brown sugar until smooth. Add the vanilla extract and milk, and heat gently while stirring to combine thoroughly.
- Add Biscuits: Remove the saucepan from heat and fold in the crushed Marie or wine biscuits until all pieces are well coated with the chocolate mixture.
- Press Base into Pan: Line a slice pan with baking paper. Press the biscuit mixture firmly and evenly into the base of the pan, creating an even layer. Place in the fridge to chill and set while you prepare the topping.
- Make the Topping: In a heatproof bowl over a saucepan of simmering water or in short bursts in the microwave, melt the white chocolate with vegetable oil until smooth and glossy. Remove from heat, then stir in the peppermint essence.
- Assemble and Chill: Pour the white chocolate peppermint mixture over the chilled biscuit base and spread evenly. Sprinkle the crushed candy canes and Christmas M&Ms over the top to decorate.
