Instructions

  1. Prepare Roasted Beets: If you haven’t roasted the beets yet, preheat your oven to 400°F (200°C). Wrap whole beets in foil and roast for about 45-60 minutes until tender when pierced with a fork. Let cool, peel the skins, and slice.
  2. Add Ingredients to Blender: In a high-speed blender, combine the unsweetened coconut milk, orange juice, packed spinach, frozen dark sweet cherries, roasted beet slices, and frozen banana. Add ice cubes if you want a colder, thicker texture.
  3. Blend Smooth: Blend on high speed until the mixture is completely smooth and creamy, scraping down the sides as needed to ensure all ingredients are fully blended.
  4. Serve Immediately: Pour the smoothie into glasses and enjoy immediately for the best flavor and texture.

  • To roast beets, wash and trim the ends, then wrap them in aluminum foil and bake at 400°F (200°C) for 45-60 minutes until fork-tender. Cool, peel, and slice before adding to the smoothie.
