Instructions

  1. Preheat Oven and Prepare Dish: Preheat to 425°F (220°C) and spray a 9×13 inch casserole dish with non-stick cooking spray to prevent sticking.

  4. Add Seasonings and Sauces: Stir in taco seasoning, salsa, taco or enchilada sauce, and ⅓ cup water until fully combined.
  5. Add Corn and Rice, Simmer: Mix in drained corn and cooked rice, letting the mixture simmer gently on low heat for 5-6 minutes to meld flavors and thicken slightly.
  6. Assemble Lasagna Layers: Spread half the meat mixture evenly in the prepared casserole dish. Layer tortillas over the meat, sprinkle half of shredded cheddar cheese, add remaining meat mixture, then another layer of tortillas, and top with remaining cheese.
