4.6 from 70 reviews

Delightfully soft and fluffy cheesy garlic rolls made from scratch using bread dough, infused with buttery garlic, mozzarella, and parmesan cheeses, then garnished with fresh parsley. Perfect as a snack, side dish, or party appetizer.

Ingredients

Scale

For the Dough

  • 1 pound bread dough

For the Garlic Butter

  • 1/4 cup butter, softened
  • 1 teaspoon minced garlic

For the Cheese Filling

  • 1 cup shredded mozzarella cheese, divided
  • 1/4 cup grated parmesan cheese, divided

For Garnish

  • 1 teaspoon chopped parsley

Instructions

  1. Prepare the Garlic Butter: In a small bowl, combine the softened butter with minced garlic until well mixed. This garlic butter will be spread over the dough to infuse flavor.
  2. Roll Out the Dough: On a lightly floured surface, roll the bread dough into a large rectangle, approximately 12 by 10 inches. This will create a base to layer the garlic butter and cheese.
  3. Apply Garlic Butter and Cheese: Spread the garlic butter evenly over the rolled-out dough. Then sprinkle half of the shredded mozzarella and half of the grated parmesan evenly on top.
  4. Form the Rolls: Starting from the long edge, tightly roll the dough into a log. Pinch the seam to seal and then slice the log into 9 to 12 even rolls, allowing for an ideal size to bake and serve.
  5. Arrange and Add More Cheese: Place the sliced rolls cut side up on a greased baking pan, ensuring enough space between each to rise. Sprinkle the remaining mozzarella and parmesan cheese over the tops.
  6. Proof the Rolls: Cover the pan with a clean kitchen towel and let the rolls rise in a warm place for 30 to 45 minutes, until they become puffy and nearly doubled in size.
  7. Bake the Rolls: Preheat your oven to 375°F (190°C). Bake the rolls for 20 to 25 minutes or until they turn golden brown on top and the cheese is bubbly.
  8. Garnish and Serve: Remove the rolls from the oven and sprinkle with chopped parsley for a fresh, herby finish. Serve warm and enjoy the cheesy, garlicky goodness!

Notes

  • You can prepare these rolls ahead of time and refrigerate before the final proofing step. Let them come to room temperature before baking.
  • For extra flavor, consider adding a pinch of red pepper flakes to the garlic butter mixture.
  • Use freshly grated Parmesan for better melting and flavor instead of pre-grated, which may have additives.
  • These rolls freeze well after baking. Reheat them in a warm oven for a few minutes before serving.
  • Adjust the amount of garlic based on your preference; fresh garlic imparts the best flavor.
