Ingredients

Scale

Meatloaf Mixture

  • 1 1/4 lbs ground beef (90% lean)
  • 2 teaspoons olive oil
  • 1/2 cup onion, finely diced
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 egg
  • 2 tablespoons water
  • 1/2 cup cheddar cheese, cut into small cubes

Topping and Garnish

  • 1/4 cup ketchup
  • 1 tablespoon chopped parsley (optional)
  • Cooking spray (for pan)

Instructions

  1. Preheat the oven: Preheat your oven to 350 degrees Fahrenheit. Line a sheet pan with foil and coat it with cooking spray to prevent sticking.
  2. Cook the onions: Heat the olive oil in a small pan over medium heat. Add the finely diced onion and cook for 4-5 minutes or until the onion is golden brown and softened. Remove from heat and stir in the yellow mustard and Worcestershire sauce until evenly combined.
  3. Combine ingredients: In a large mixing bowl, add the cooked onion mixture, ground beef, crumbled bacon, panko breadcrumbs, salt, pepper, egg, water, and cubed cheddar cheese. Mix thoroughly until all ingredients are well blended.
  4. Shape meatloaves: Divide the meat mixture into four equal portions. Form each portion into a compact individual meatloaf and place them on the prepared baking sheet.
  5. Add ketchup topping: Spread approximately 1 tablespoon of ketchup evenly over the top of each meatloaf for a tangy glaze.
  6. Bake the meatloaf: Place the sheet pan into the preheated oven and bake for 20-25 minutes, or until the meatloaf is cooked through and reaches a safe internal temperature of 160°F (71°C).
  7. Garnish and serve: Remove the meatloaves from the oven. Sprinkle with chopped parsley if desired, then serve hot.

Notes

  • For best results, use 90% lean ground beef to reduce excess grease while keeping the meatloaf juicy.
  • Be sure to cook the onions until golden to add depth of flavor to the meat mixture.
  • You can substitute the cheddar cheese with your preferred melting cheese like mozzarella or Monterey Jack.
  • Ensure meatloaf reaches an internal temperature of 160°F for safe consumption.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated thoroughly before serving.
