Biscuit Layer

- 4 ounces Diced Green Chiles, drained
- ¾ cup Cheddar Cheese, Fiesta Blend, shredded (part of total cheese)

- ¾ cup Cheddar Cheese, Fiesta Blend, shredded (remaining part of total cheese)
- Preheat the Oven: Set your oven to 350℉ to prepare for baking the casserole.
- Cook the Ground Beef: Heat a large skillet over medium-high heat. Add the lean ground beef and break it apart with a spoon. Cook until the beef is no longer pink, stirring occasionally. Drain excess fat. While cooking, you can start making the biscuit dough.
- Prepare the Biscuit Dough: In a mixing bowl, combine the biscuit mix and water. Stir well, using your hands if possible, until a dough forms. Spray a 9 x 13-inch casserole dish with cooking spray and press the dough evenly into the dish, reaching all edges. Bake it in the oven for 5-8 minutes or until the dough is set and lightly golden. Remove and set aside, but keep the oven on.
- Cook the Vegetables: Add the chopped onion and red bell pepper to the cooked ground beef in the skillet. Stir and cook for about 4 minutes until vegetables are softened. Add the taco seasoning mix and stir well to combine. Remove from heat.
- Assemble the Layers: Spread the cooked meat and vegetable mixture evenly over the baked biscuit crust in the casserole dish.
- Prepare the Sour Cream Layer: In a separate mixing bowl, combine the sour cream, mayonnaise, drained diced green chiles, ¾ cup of shredded cheddar cheese, and garlic powder. Mix until smooth and evenly blended. Carefully spread this creamy mixture over the ground beef layer in the casserole dish.
- Add Salsa and Cheese: Spoon small dollops of mild salsa evenly over the sour cream layer without spreading them out. Then sprinkle the remaining ¾ cup shredded cheddar cheese evenly on top.
- Bake: Return the casserole to the oven uncovered and bake for 30 minutes, or until the casserole is hot and bubbly and the cheese is melted and slightly golden on top.
