Carrot Bread

Carrot Bread is a delicious and moist bread filled with shredded carrots, coconut, cherries, raisins, and walnuts. It’s perfect for breakfast or as a snack with a cup of tea.

Dry Ingredients:

    • 2 ½ cups all-purpose flour
    • 1 cup white sugar
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon ground cinnamon
    • ½ teaspoon salt

Wet Ingredients:

    • 3 large eggs, beaten
    • ½ cup vegetable oil
    • ½ cup milk

Mix-Ins:

  • 2 cups shredded carrots
  • 1 (3.5 ounce) package flaked coconut
  • ½ cup maraschino cherries, chopped
  • ½ cup raisins
  • ½ cup chopped walnuts

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix Dry Ingredients: In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Add Wet Ingredients: Stir in the beaten eggs, vegetable oil, and milk until well combined.
  4. Fold in Mix-Ins: Gently fold in the shredded carrots, coconut, cherries, raisins, and walnuts.
  5. Bake: Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Allow the carrot bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!

Notes

  • You can add a cream cheese frosting or glaze on top for extra sweetness.
  • This bread freezes well, so you can make a batch and store it for later.
