Ingredients:
- 4 chicken thighs (bone-in, skin-on)
- 1 tablespoon vegetable oil
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon ginger, minced
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch (optional, for thickening)
- Salt and pepper, to taste
- 2 cups jasmine rice
- 4 cups water
- Chopped green onions, for garnish
- Fresh cilantro, for garnish
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Cook the chicken: In a large oven-safe skillet, heat vegetable oil over medium-high heat. Season the chicken thighs with salt and pepper, then sear them skin-side down until golden brown, about 5 minutes per side.
- Make the sauce: In the same skillet, add soy sauce, brown sugar, ginger, garlic, chicken broth, and sesame oil. Stir to combine and bring to a simmer.
- Braise the chicken: Transfer the skillet to the preheated oven and braise the chicken for 25-30 minutes, or until cooked through.
- Cook the rice: In a separate pot, bring water to a boil. Add jasmine rice, reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
- Assemble: Serve the caramelised soy chicken over jasmine rice, garnished with chopped green onions and fresh cilantro.
Notes
- You can thicken the sauce with cornstarch slurry if desired.
- Feel free to adjust the seasoning to suit your taste preferences.
- This dish pairs well with steamed vegetables or a side salad.
