This recipe features tender caramelised soy chicken thighs simmered in a flavorful garlic ginger broth, served over jasmine rice and garnished with green onions and fresh cilantro.

  • 4 chicken thighs (bone-in, skin-on)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ginger, minced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch (optional, for thickening)
  • Salt and pepper, to taste
  • 2 cups jasmine rice
  • 4 cups water
  • Chopped green onions, for garnish
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Cook the chicken: In a large oven-safe skillet, heat vegetable oil over medium-high heat. Season the chicken thighs with salt and pepper, then sear them skin-side down until golden brown, about 5 minutes per side.
  3. Make the sauce: In the same skillet, add soy sauce, brown sugar, ginger, garlic, chicken broth, and sesame oil. Stir to combine and bring to a simmer.
  4. Braise the chicken: Transfer the skillet to the preheated oven and braise the chicken for 25-30 minutes, or until cooked through.
  5. Cook the rice: In a separate pot, bring water to a boil. Add jasmine rice, reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
  6. Assemble: Serve the caramelised soy chicken over jasmine rice, garnished with chopped green onions and fresh cilantro.

  • You can thicken the sauce with cornstarch slurry if desired.
