For the Bowls

  • 23 medium potatoes
  • 2 tablespoons olive oil, divided
  • 500 grams lean beef mince
  • Lettuce, shredded
  • Cheese, dairy-free or regular, sliced or shredded
  • Pickle slices

For the Burger Sauce

  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard (Dijon or yellow)
  • 1 teaspoon pickle juice (from the jar of pickles)
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika

Instructions

  1. Prepare the Spice Mix: In a small bowl, combine smoked paprika, garlic powder, onion powder, dried oregano or mixed herbs, salt, and black pepper. Mix thoroughly and set aside.
  2. Cook the Potatoes: Preheat your oven to 200°C (392°F). Wash and dice the medium potatoes into bite-size pieces. Toss them in 1 tablespoon of olive oil and spread evenly on a baking tray. Roast for about 25-30 minutes or until golden and crispy, turning halfway through for even cooking.
  3. Cook the Beef: While the potatoes are roasting, heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the lean beef mince and sprinkle the prepared spice mix over it. Stir and cook, breaking the mince apart, until it’s browned and cooked through, about 8-10 minutes. Drain excess fat if needed.
  4. Make the Burger Sauce: In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle juice, garlic powder, and smoked paprika until smooth and well combined.
  5. Assemble the Bowls: In serving bowls, place a bed of shredded lettuce. Top with roasted potatoes and cooked beef mince. Add cheese and pickle slices on top. Drizzle generously with the homemade burger sauce.
