4.6 from 148 reviews

These Buffalo Chicken Roll-Ups are a creamy, spicy appetizer combining shredded rotisserie chicken with a tangy buffalo sauce and creamy cheeses, all rolled in flour tortillas. Perfect for game day or parties, they are chilled and sliced for easy, bite-sized savory treats.

Ingredients

Scale

Buffalo Mixture

  • 8 ounces cream cheese, softened
  • 5 ounces Frank’s Red Hot Original Sauce
  • ½ cup bleu cheese, crumbled
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • 1 cup colby jack cheese, shredded
  • ⅓ cup green onions, chopped

Others

  • 1 rotisserie chicken, meat shredded (about 3 cups)
  • 5 large flour tortillas

Instructions

  1. Make the Buffalo Mixture: In a large mixing bowl, combine cream cheese, Frank’s Red Hot Original Sauce, bleu cheese, salt, garlic powder, colby jack cheese, and green onions. Use a hand mixer to blend them until smooth with no cream cheese chunks remaining.
  2. Add Chicken: Stir the shredded rotisserie chicken into the buffalo mixture, making sure every piece is well coated with the spicy creamy sauce.
  3. Assemble Roll-Ups: Spread about ¾ cup of the buffalo chicken mixture evenly onto each flour tortilla. Roll each tortilla tightly to avoid shifting the filling.
  4. Chill: Wrap each rolled tortilla tightly in plastic wrap and refrigerate for 2 to 4 hours. This helps firm them up for easier slicing.
  5. Slice and Serve: Remove from refrigerator, unwrap, and slice off the ends. Cut the rolls into bite-sized slices using a sharp knife. Discard the end pieces and serve immediately.

Notes

  • Precooked shredded chicken from a regular oven-roasted chicken works just as well as rotisserie chicken.
  • Chop all ingredients uniformly for a consistent texture and appearance.
  • Use room temperature cream cheese to avoid lumps in the buffalo mixture.
  • Secure roll-ups with cocktail sticks if needed to prevent unrolling.
  • Do not skip the chilling step as it makes slicing easier and cleaner.
