Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breast or thighs, diced

Vegetables and Aromatics

  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 cup baby spinach

Dairy and Cheese

  • 1 (5.2 oz) package Boursin garlic & herb cheese
  • 1/4 cup grated Parmesan cheese (optional)

Grains and Liquids

  • 1 cup uncooked orzo
  • 2 1/4 cups chicken broth

Oils and Seasonings

  • 1 tbsp olive oil
  • Salt and pepper, to taste

Garnish

  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to get ready for baking the dish in the final stages.
  2. Cook Chicken: Heat olive oil in a large oven-safe skillet or baking dish over medium heat. Add the diced chicken breast or thighs, season with salt and pepper, and cook until browned on all sides. Once browned, remove the chicken from the pan and set aside to keep warm.
  3. Toast Garlic and Orzo: In the same pan, add the minced garlic and toast for about 30 seconds until fragrant. Stir in the uncooked orzo and toast it for an additional 1 minute. This step adds flavor and ensures a nutty taste in the orzo.
  4. Add Broth and Vegetables: Pour in the chicken broth and bring the mixture to a simmer. Stir in the diced zucchini and halved cherry tomatoes. Then, place the Boursin garlic and herb cheese in the center of the pan, allowing it to melt into the mixture.
  5. Return Chicken and Bake Covered: Nestle the browned chicken pieces back into the dish and gently mix slightly to combine. Cover the skillet or baking dish tightly with foil and place it in the preheated oven. Bake for 20 minutes to allow the orzo to cook through and flavors to meld.
  6. Add Spinach and Parmesan, Bake Uncovered: Remove the foil and stir in the baby spinach and grated Parmesan cheese if using. Return the dish to the oven and bake uncovered for an additional 5 to 10 minutes until the orzo is tender and the mixture is creamy.
  7. Garnish and Serve: Garnish the baked orzo with fresh basil or parsley. Serve the dish hot for a delicious, hearty meal.

Notes

  • Swap veggies based on what you have on hand—mushrooms, bell peppers, or broccoli all work well in this recipe.
  • Use rotisserie chicken as a shortcut to save cooking time.
  • For extra richness and creaminess, add a splash of cream when stirring in the spinach.
