Ingredients

Scale

Rice and Proteins

  • 4 cups cold cooked rice, day-old, preferably Jasmine or long grain
  • 1 pound ground beef or finely chopped leftover steak
  • 2 large eggs

Vegetables and Aromatics

  • 2 medium yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 2 scallions, sliced green onions
  • 1 cup optional vegetables (peas, carrots, bell pepper, or mushrooms)

Oils, Sauces, and Seasonings

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons neutral oil (canola or avocado)
  • 1 tablespoon butter
  • Pinch of salt (for sautéing onions)

Instructions

  1. Preparation: Break up any clumps in the cold rice to ensure loose, separate grains for even cooking.
  2. Sauté Onions: Heat a skillet with a bit of the neutral oil and a pinch of salt, then cook the thinly sliced onions over medium heat until they turn golden and caramelized, releasing their natural sweetness.
  3. Cook Beef and Aromatics: In the same skillet, add the ground beef and cook until browned. During the last minute of cooking, add the minced garlic and ginger to infuse the meat with aromatic flavor.
  4. Combine Sauces and Rice: Stir in the soy sauce, oyster sauce, and sesame oil to the beef mixture. Then add the cold, broken-up rice, tossing thoroughly to coat all the ingredients evenly with the sauces.
  5. Prepare for Baking: Transfer the beef and rice mixture into a greased baking dish. Create two wells in the rice mixture and crack the eggs directly into these wells for baking.
  6. Bake: Place the baking dish into a preheated oven at 400°F (204°C) and bake for 10 to 12 minutes, or until the edges of the rice are crisp and the eggs have set to your desired doneness.
  7. Finish and Serve: Remove from the oven and fluff the eggs into the rice, blending them throughout. Fold in the butter and sliced green onions, then add optional vegetables if desired. Adjust seasoning to taste before serving.

Notes

  • Use day-old rice chilled in the fridge to prevent mushy results and ensure the best texture.
  • Leftovers can be cooled and stored in an airtight container for up to 3 to 4 days, and flavors improve after overnight refrigeration.
  • This dish reheats well in a skillet or microwave; add a splash of soy sauce or oil if dry.
  • Serving the fried rice with a crunchy or fresh side, such as cucumber salad or pickled vegetables, provides great textural balance.
  • Optional vegetables can be substituted or omitted according to preference.
