Apple Filling

  • 2 large apples, peeled and diced
  • 2 tablespoon (28 g) unsalted butter
  • ¼ cup (50 g) brown sugar
  • 1¾ teaspoon cinnamon
  • ⅛ teaspoon allspice
  • ⅛ teaspoon nutmeg

Sweet Cream Cheese

  • 8 oz. cream cheese, room temperature
  • ¼ cup (50 g) granulated sugar
  • 1 teaspoon vanilla extract

Crumble Topping

  • 2 tablespoon (28 g) unsalted butter, melted
  • ¼ cup (50 g) brown sugar
  • ½ teaspoon cinnamon
  • ¼ cup (30 g) all purpose flour

Instructions

  1. Prepare the Sweet Brioche Dough: Warm the milk to 110℉ and mix it with yeast and 1 teaspoon of sugar. Let it sit for 5-10 minutes until foamy. In a large bowl, combine bread flour, granulated sugar, and salt. Add egg yolks, vanilla extract, and the yeast mixture, mixing until a rough dough forms. Gradually add the softened butter, kneading until smooth and elastic. Cover and let the dough rise until doubled in size, about 1 to 1.5 hours.
  2. Make the Apple Filling: In a skillet, melt butter over medium heat. Add diced apples, brown sugar, cinnamon, allspice, and nutmeg. Cook until the apples are tender and mixture is somewhat caramelized, about 8-10 minutes. Remove from heat and let cool.
  3. Prepare the Sweet Cream Cheese: In a mixing bowl, combine the room temperature cream cheese, granulated sugar, and vanilla extract. Beat until smooth and creamy. Set aside.
  4. Make the Crumble Topping: In a small bowl, mix melted butter, brown sugar, cinnamon, and all-purpose flour until crumbly. Set aside.
  5. Assemble the Buns: Punch down the risen dough and roll it into a rectangle about 12×16 inches. Spread the sweet cream cheese evenly over the dough, leaving a small border around edges. Sprinkle the apple filling evenly on top. Roll the dough tightly into a log from the longer side. Cut into 8 equal slices and place them cut-side up in a parchment-lined baking pan.
