Ingredients

Scale

Filling

  • 2 cups shredded rotisserie chicken
  • 1 package (8 ounces) cream cheese, room temperature
  • 1½ cups sharp cheddar cheese, shredded
  • 1 cup black beans, drained and rinsed
  • 1 can (15.25 ounces) sweet corn, drained
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 2 tablespoons taco seasoning
  • 1 cup fresh pico de gallo

Assembly and Garnish

  • 6 flour tortillas, burrito size
  • Cooking spray
  • Sour cream, for garnish
  • Pico de gallo, for garnish

Instructions

  1. Prepare the Filling: In a large bowl, combine the shredded rotisserie chicken, softened cream cheese, shredded sharp cheddar cheese, black beans, sweet corn, diced tomatoes, and taco seasoning. Mix everything thoroughly until well combined and creamy.
  2. Assemble the Burritos: Lay out one flour tortilla and spread about 1/6th of the filling mixture evenly down the center. Top with a spoonful of fresh pico de gallo. Fold in the sides and then roll the tortilla tightly to form a burrito. Repeat with the remaining tortillas and filling.
  3. Preheat the Air Fryer: Set your air fryer to 370°F (188°C) and let it preheat for about 3 minutes.
  4. Air Fry the Burritos: Lightly spray the outside of each burrito with cooking spray for a crispy finish. Place the burritos seam side down in the air fryer basket in a single layer, ensuring they do not touch. Air fry for 8 to 10 minutes, turning halfway through, until the tortillas are golden brown and crisp.
  5. Serve: Carefully remove the burritos from the air fryer and let them cool slightly. Garnish with additional pico de gallo and a dollop of sour cream. Serve warm and enjoy!

Notes

  • For best results, use room temperature cream cheese to make mixing easier and ensure a smooth filling.
  • If you prefer a spicier burrito, add some chopped jalapeños or a dash of hot sauce to the filling mixture.
  • Make sure the burritos are sealed tightly to prevent the filling from spilling during air frying.
  • If your air fryer basket is small, cook the burritos in batches to avoid overcrowding, which can affect crispiness.
  • Leftover burritos can be refrigerated and reheated in the air fryer at 350°F (175°C) for 4-5 minutes.
