Ingredients

Scale

Stir Fry:

  • 1 tablespoon avocado oil
  • 1 pound ground turkey (or chicken)
  • ½ onion, diced
  • 34 cloves garlic, minced
  • Small crown broccoli, chopped into florets (about 1 to 1½ cups)
  • 1 red bell pepper, sliced
  • 1½ cups carrot, thinly sliced (or pre-shredded)

Teriyaki Sauce:

  • ¾ cup chicken bone broth
  • ½ cup coconut aminos
  • 1 tablespoon coconut sugar
  • 1 tablespoon unseasoned rice vinegar
  • 2 teaspoons sesame oil
  • 1 tablespoon fresh ginger, minced or grated
  • 2 cloves garlic, minced
  • 2 tablespoons arrowroot starch

Serve With:

  • Prepared rice (frozen pre-cooked rice suggested for quick prep)
  • Sliced green onions
  • Sriracha sauce, for drizzling
  • Sesame seeds

Instructions

  1. Heat Oil and Cook Turkey: Heat avocado oil in a large skillet or wok over medium-high heat. Add diced onion and ground turkey, cooking for 3 to 4 minutes while breaking up the turkey into crumbles.
  2. Add Vegetables: Stir in minced garlic, broccoli florets, sliced red bell pepper, and thinly sliced carrots. Continue cooking for another 3 to 4 minutes until the turkey is fully cooked and no longer pink.
  3. Prepare Teriyaki Sauce: While the turkey and vegetables cook, whisk together chicken bone broth, coconut aminos, coconut sugar, rice vinegar, sesame oil, fresh ginger, garlic, and arrowroot starch in a small bowl until smooth.
  4. Add Sauce to Stir Fry: Pour the prepared teriyaki sauce over the cooked turkey and vegetables in the skillet. Stir continuously and cook for an additional 4 to 5 minutes to allow the sauce to thicken and coat the ingredients.
  5. Serve: Serve the ground turkey teriyaki stir fry over prepared rice. Garnish with sliced green onions, a sprinkle of sesame seeds, and a drizzle of sriracha sauce for added flavor and spice. Enjoy immediately.
