Stir Fry:
- 1 tablespoon avocado oil
- 1 pound ground turkey (or chicken)
- ½ onion, diced
- 3–4 cloves garlic, minced
- 1 small crown broccoli, chopped into florets
- 1 red bell pepper, sliced
- 1 ½ cups carrot, thinly sliced (or pre-shredded)
Teriyaki Sauce:
- ¾ cup chicken bone broth
- ½ cup coconut aminos
- 1 tablespoon coconut sugar
- 1 tablespoon unseasoned rice vinegar
- 2 teaspoons sesame oil
- 1 tablespoon fresh ginger, minced or grated
- 2 cloves garlic, minced
- 2 tablespoons arrowroot starch
Serve With:
- Prepared rice (preferably frozen pre-cooked rice for faster prep)
- Green onions, sliced
- Sriracha, to taste
- Sesame seeds
- Heat the oil: Warm the avocado oil in a large skillet or wok over medium-high heat to prepare for cooking the turkey and vegetables.
- Cook turkey and onion: Add the diced onion and ground turkey to the skillet. Cook for about 3 to 4 minutes, breaking up the turkey with a spatula as it cooks until it starts to brown.
- Add garlic and veggies: Stir in the minced garlic, broccoli florets, sliced carrots, and red bell pepper. Cook everything together for another 3 to 4 minutes until the turkey is no longer pink and the vegetables are slightly tender but still crisp.
- Make teriyaki sauce: While the turkey and vegetables are cooking, whisk together the chicken bone broth, coconut aminos, coconut sugar, rice vinegar, sesame oil, fresh ginger, garlic, and arrowroot starch in a small bowl until smooth.
- Add sauce and thicken: Pour the teriyaki sauce over the turkey and vegetables in the skillet. Stir well and continue cooking for 4 to 5 minutes, allowing the sauce to thicken and coat all the ingredients evenly.
- Serve with rice: Serve the teriyaki ground turkey stir fry hot over prepared rice. Garnish with sliced green onions, a sprinkle of sesame seeds, and a drizzle of sriracha to taste. Enjoy!
