Stir Fry:

  • 1 pound ground turkey (or chicken)

  • 34 cloves garlic, minced
  • 1 small crown broccoli, chopped into florets

  • 1 ½ cups carrot, thinly sliced (or pre-shredded)

Teriyaki Sauce:

  • ¾ cup chicken bone broth
  • ½ cup coconut aminos
  • 1 tablespoon coconut sugar
  • 1 tablespoon unseasoned rice vinegar
  • 2 teaspoons sesame oil
  • 1 tablespoon fresh ginger, minced or grated
  • 2 cloves garlic, minced
  • 2 tablespoons arrowroot starch

Serve With:

  • Prepared rice (preferably frozen pre-cooked rice for faster prep)
  • Green onions, sliced
  • Sriracha, to taste
  • Sesame seeds

Instructions

  1. Heat the oil: Warm the avocado oil in a large skillet or wok over medium-high heat to prepare for cooking the turkey and vegetables.
  2. Cook turkey and onion: Add the diced onion and ground turkey to the skillet. Cook for about 3 to 4 minutes, breaking up the turkey with a spatula as it cooks until it starts to brown.
  3. Add garlic and veggies: Stir in the minced garlic, broccoli florets, sliced carrots, and red bell pepper. Cook everything together for another 3 to 4 minutes until the turkey is no longer pink and the vegetables are slightly tender but still crisp.
  4. Make teriyaki sauce: While the turkey and vegetables are cooking, whisk together the chicken bone broth, coconut aminos, coconut sugar, rice vinegar, sesame oil, fresh ginger, garlic, and arrowroot starch in a small bowl until smooth.
  5. Add sauce and thicken: Pour the teriyaki sauce over the turkey and vegetables in the skillet. Stir well and continue cooking for 4 to 5 minutes, allowing the sauce to thicken and coat all the ingredients evenly.
  6. Serve with rice: Serve the teriyaki ground turkey stir fry hot over prepared rice. Garnish with sliced green onions, a sprinkle of sesame seeds, and a drizzle of sriracha to taste. Enjoy!
